High-protein spinach soup with cottage cheese and smoked salmon

Today I'm coming to you with a suggestion for a light, protein-rich spinach soup that's perfect as a post-workout meal, as well as a quick lunch or dinner on non-workout days.
Nutritional values (per 1 serving without additional carbohydrates):
Protein: approx. 35-40 g
Kcl: approx. 410-420
Preparation time: 20 minutes
Number of servings: 2
Ingredients:
0.5 l of vegetable broth (homemade or good quality ready-made)
1 onion, cut into feathers
2 cloves of garlic
300 g fresh spinach
200 g cottage cheese (I used Arla one)
1 tablespoon olive oil/rapeseed oil + 1 tablespoon butter
pepper and soy sauce to taste
to serve, 100 g smoked salmon fried in a dry pan per person, in a vegetarian version you can replace it with fried tempeh + dill
Preparation:
Heat the fat in a pot. Add the onion and begin to sauté, then add the spinach in batches and sauté until reduced. Add the garlic, pour in the broth, and simmer for 10 minutes. Turn off the heat, add the cottage cheese, and blend the soup until smooth. Season with pepper and a dash of soy sauce.
Serve the spinach soup with salmon or tempeh fried in a dry pan, sprinkled with fresh dill.
If you want to enrich your soup with added carbohydrates, a few tablespoons of cooked barley or rice will work very well.
